Mediterranean Rice With Feta Cheese
2 cups of rice
6 cups of water
2 cups frozen vegetable mix with peas, carrots and corn
100 g arugula, shredded
1 red pepper, finely chopped
150 g feta cheese, diced
100 g black olives, sliced
50 g of butter
Cook the rice for about 30 minutes in the water until soft.
Drain the rice and leave at room temperature until dry and grains separate.
Heat the butter on medium high heat and add the vegetable mix.
Allow the water to turn aside and add the pepper and olives.
Add the rice and cook another 2 minutes.
Remove from heat and add olives and cheese.
