Fried Rice With Pineapple: Chinese Style
1 and 1/2 cup of Basmati rice
1 cup of pineapple, chopped (maybe from a can)
1/2 onion, sliced
1/2 cup of green pepper, cut into strips
1/2 cup of carrots cut into strips
1/2 cup of corn, canned
1/4 cup of peas
1/2 cup of Feta cheese, cut into cubes
½ cup of cashew, cut into large pieces
1 bunch of green onion for sprinkling
1 cup of coconut milk
1 tablespoon of ginger, chopped
2 tablespoons of soy sauce
1 tablespoon of sweet sour sauce
1 tablespoon of garlic powder
2 tablespoons of frying oil
salt to taste
Boil the rice in 2 cups of water and the cup of coconut milk for about 20 minutes.
Bake the cubes of cheese gently in a lightly heated pan for 2-3 minutes .
Allow to cool for several hours.
Heat the olive oil on medium heat and fry the ginger until you feel its scent.
Add the onion and fry for 1-2 minutes.
Add pineapple, green pepper, carrots, corn, peas and cashew.
Fry another 4-5 minutes stirring.
Add the rice and mix.
Add the cheese, soy sauce, sweet sauce, chili and salt and mix gently.
Sprinkle the green onions.
