No-Bake Healthy Brownies
1/4 cup walnuts
5 tablespoons cocoa powder
2 tablespoons steel cut oats
1 teaspoon instant espresso powder
10 medjool dates, pitted and cut into fourths
1 tablespoon vanilla extract
2 tablespoon chocolate, melted for drizzling
1. Pulse walnuts, cocoa, espresso, and pitted dates in food processor.
2. Once mixture is fine, pulse in vanilla, salt, and water in 1 tablespoon increments until the powder becomes firm dough.
3. Line an 8- x 4- x 2 1/2-inch loaf pan with parchment paper and press dough into pan. Cut into squares.
