Homemade watermelon rinds jam

1 kg watermelon rinds
1 kg sugar
Geranium ,a few leaves
Juice of ½ lemon or 5g citric acid
1,2 liter of water
Peel the outer green part and the inside pink of rinds.
Cut them into small shapes and cook them in boiling water for 3 minutes.
Drain and repeat the cooking in boiling water 2 more times.
Drain and rinse with cold water. Drain well again.
Boil sugar with water on medium heat and cook for about 10-15 minutes until thickened.
Add the cut and boiled rinds and cook for 20 minutes.
As jam syrup is not so thick after cooling, it is advisable syrup to be thicker at the end of boiling.
Add geranium leaves, lemon juice and stir 2-3 minutes.
Before it spread in jars, leave sweets for a few hours to cool.
